Roast duck with delicious sauce

It takes two to three days to defrost a duck in the fridge, so remember to start early with the Christmas duck. Recipe fra Arla

  • 2 ducks (about 7200 g)

  • Coarse salt 4 tbsp 

  • Freshly ground pepper 

  • 6 peeled apples cut into wedges; for example belle de boskoop

  • Stoneless prunes 400 g 

  • Water 1½ liter 

  • Sauce

  • Milk sauce 1 liter (can be bought precooked)

  • Coarse salt 1 tsp 

  • Freshly ground pepper 

  • Duck fat 2 tbsp 

  • Sauce suit

  • Roast duck

  • Rinse, wash, and dry the duck. Remove leftover feathers. Remove the wing tips and gump. Rub the duck with salt and pepper inside and out. . 

  • Stuff the duck with apples and prunes and close it with cotton string. You can also tie the duck’s wings and legs.

  • Place the duck breast up on an oven grill. Add half the water, and the wingtips, neck, and heart to the oven pan. Place the grill on top and roast the duck in the middle of the oven. Add the rest of the water little by little. 

  • Remove the duck from the oven after 2½ hours. Check that the legs are coming off the bone and that the juices are clear in colour. Roast it for a bit longer if not. Rest the duck for about ½ an hour - save the sauce for later. 

  • Sauce

  • Strain the sauce and skim it. Measure the sauce, add water or simmer down until there is 1 dl left. 

  • Add white milk sauce, salt and pepper, duck fat, and colouring. Bring the sauce to a boil and season it. 

  • Serving

  • Cut the duck into upper and lower legs and wings. Cut both breasts into 3 or 4 pieces. Place the meat in an oven pan. Place the apples and prunes in a bowl. Grill the duck meat in the middle of the oven. 

  • Prepare the duck as described above and brown it for 15 minutes in the oven at 225 degrees c or 435 degrees f. Then lower the heat to 150 c or 300 f and roast the duck for 4 hours.

    If you prefer cooking the duck the day before: 

    Roast the duck in the morning or the day before. Cut out the duck, place it in an oven pan and place that covered up in the fridge. You can brush it with melted duck fat and warm the duck in the oven until it is well done, for about 20 minutes at 200 c or 390 f. And you can grill the duck so that the skin becomes crispy. It’s easy to trim the fat, when the sauce and fat get to cool down. 

    Defrosting your duck 

    It takes about 2-3 days to defrost a duck in the fridge.

    2½-3 hours at 175 c or 350 f in a normal oven.

    About 5 min. 

     

    Slow roasting

  • Prepare the duck as described above and brown it for 15 minutes in the oven at 225 degrees c or 435 degrees f. Then lower the heat to 150 c or 300 f and roast the duck for 4 hours.
