VARDES MADFEST at Von Lügenhals

From 1 to 31 October, we celebrate the flavours of Varde and invite you to VARDES MADFEST. For an entire month, you can compose your own menu of small dishes – created using the season's finest ingredients from local producers.

The menu is designed as small dishes, so you can choose one or more and create your own taste journey through autumn.


The menu:
MUSHROOM BRIOCHE – fried mushrooms & port wine
NORTH SEA COD – sashimi, mustard seeds, onion compote & dill oil
BEEF CARPACCIO – pickled red onions, basil pesto, root vegetable chips & grated Havgus cheese
GRILLED COD – orzo pasta, bacon & ginger
CHICKEN SCHNITZEL – chanterelles, pearl onions & velouté
ROE DEER TOAST – braised roe deer, lingonberries, parsley & juniper berries
PLUMS – meringue, ice cream & tart gel
